William Blue’s award-winning training restaurant, William Blue Dining, will also move to The Rocks, taking over the space previously held by Neil Perry’s Rockpool restaurant (pictured). The restaurant will occupy the space for the next 12 months while a brand new kitchen, bar and restaurant facility is built within the new college campus.
Coralie Morrissey, Think Education’s dean of hospitality and business, said the new location, and state-of-the-art facilities will help ensure students gain valuable industry experience.
“We want our students to graduate with the latest knowledge and experience,” she said. “That’s why we are constantly changing our training to match industry best practice, and extending the breadth and depth of our service skills and culinary techniques.
“Being in The Rocks also positions William Blue in the heart of a hospitality community, which means we can engage with industry, and strengthen and grow our industry connections. The skills and experience gained in our brand new campus, and award-winning restaurant in the former Rockpool venue, will truly set William Blue students apart.”
Neil Perry, owner of the Rockpool Group, says he is happy the venue will now be used to help inspire and train the next generation.
“I am pleased that the old Rockpool site is going to be used for training purposes and will continue to be a training ground for the next generation of chefs and hospitality managers,” he said. “I have had a strong association with William Blue for many years, even having a Rockpool sponsored classroom within the current campus, and I look forward to exploring more opportunities together in the future.”
The brand new William Blue Dining restaurant at The Rocks opens to the public on February 23.
