The most exciting talent search for chefs in the world recently came to an exhilarating close in Milan with Yasuhiro Fujio announced as the S.Pellegrino Young Chef 2018. Fujio’s signature dish, ‘Across the Sea’, wowed the Grand Jury.

Fujio now embarks on an exciting journey to help shape the future of gastronomy. “What I’m going to do from now on is turn that fear into courage,” he said. 

Chosen by the Grand Jury made up of giants of global gastronomy, Fujio captivated the panel who were also enthralled with the overall standard of competition. All Grand Jury members agreed it was a tough decision since the standard of this year’s competition was so high, yet all appreciated Fujio was able to tell his own story in an original way.

The 21 young chef finalists chosen from around the world included John Rivera, the chef de partie from Amaru restaurant in Armadale, Victoria. He represented the Pacific with his signature dish entitled ‘Sinigang’, featuring Hapuka and tomato, calamansi and taro.
