Finally, the much-anticipated Scarborough Beach Pool in WA is open to the public. Not simply a swimming pool, it also features fitness facilities and the family-friendly Beach Pool and Whale Playground.
Perched above the pool with a curved wall of windows looking out to sea is the landmark restaurant, La Capannina. Meaning ‘small hut’— a cosy place, you go to enjoy the little things in life—La Capannina is named after a popular restaurant in Tuscany. Combining amazing views, authentic Italian cuisine and spectacular cocktails, this contemporary 250-seater eatery has it all.
The cooking island and associated equipment was a joint supply program by Caterlink and Comcater and started in November 2017. The chef Edoardo Bruni designed the cooking island to his very specific requirements and this enables the kitchen to cook up to 300 covers with each dish cooked to order.
For owner Karri Li, it is her first venture into ownership after working in hospitality for 15 years. Seeking to keep the restaurant as authentic as possible, she recruited front-of-house manager Davide Cappati, who moved to Australia from Italy four years ago, and previously ran a cafe in Turin.
The menu is focused on Italian cuisine, but Cappati said La Capannina also offers some Western fusion dishes. “Our pizza oven has come from Italy and our chefs have created some fantastic pizzas,” he says. Head chef Edoardo Bruni also creates plenty of pastas and local seafood dishes.
The concept is very casual and beach-friendly, with the option to dine either inside, or outside on the balcony.
The kitchen has been fitted with a variety of commercial kitchen equipment, including a stylish Mareno island cooking suite, which offers the perfect blend of sophisticated European design and powerful performance. At the heart of the Mareno island suite is a target top, which provides chefs with an entire surface of 3cm-thick cast-iron hotplate. The elevated high-powered salamander and high-powered gas burners give the chefs in their words a ‘Ferrari’ to produce all their pasta dishes cooked to order.
The fit-out also includes the latest from RATIONAL: the Combi Master Plus®XS. This small sized combi oven boasts all the features of its bigger brothers but in a small compact design (55.5cm deep, 65.5cm wide and 56.7 cm high).
