Recently, they spoke with Angelo Karakousis, general manager of Barnacle Bill in South Australia, who revealed his top four tips on how to get the most out of your cooking oils in a busy kitchen. “There’s nothing worse than serving a piece of deep fried food that’s oily and soggy, which is why it is important to treat your oils correctly,” says Karakousis. “If you look after your oils with care, the foods that you dish up—and spend time preparing—will present the best flavours they have to offer. You should regularly filter your oils; don’t mix foods together. Make sure the oil temperature isn’t too high and ensure you’re not overloading the fryer.”
