Dilmah is putting the Tea Back In High Tea!

Dilmah is calling on all tea loving Australian chefs and industry professionals to come forward and showcase their high tea culinary skills in the annual Dilmah Real High Tea Challenge.

Dilmah launched the Real High Tea Challenge as a movement to put the tea back into high tea. With the evolution of the traditional afternoon treat, where tea was always the hero, to an emphasis more on cakes, sandwiches and pastries, Dilmah argues that tea has taken a back seat and needs to once again take centre stage. 130605_SA_P01_1683The competition gives chefs the chance to demonstrate their skills in the kitchen creating a fusion of the contemporary and the traditional, by creating harmonious dishes to accompany perfectly brewed tea. There will be particular emphasis on the tea to be ‘real’ – using Dilmah tea made in the traditional way where it is handpicked, withered, rolled, fermented and roasted.

The challenge is not to recreate the old, but to redefine the high tea occasion. To make it current whilst recognising the traditional values of this special culinary treat. Entrants are asked to craft a unique high tea menu, and to present that menu to judges at the Real High Tea events – taking place in Victoria and New South Wales. The judges, including Dilhan C. Fernando, son of Dilmah tea’s founder, Merrill J. Fernando, celebrity chef Peter Kuruvita and RHT-image-1Black Hat chef Bernd Uber, will then assess contestants on their understanding of the high tea occasion, their inventiveness, technical skills and their passion for cooking.

The winning three teams will receive a trip to exotic Sri Lanka, including flights and accommodation, where they’ll meet the Dilmah family, tour the Dilmah tea fields and experience exclusive tea tastings and exquisite tea inspired cuisine.
